Relocation and Renewal 

I have not posted in a very long time. My life has unwound and changed so much in the past 8 months. I had graduated college (yay!) and have establish a full time internship in th DC area. I am currently pursuing full time employment as well. I have learned so much on the way and have done so much on my own that I have gained a new found independence, motivation and dedication to creating a life of meaning for me. I have put aside what other people have said about me, thought about me, and told me what to do and am in full focus of my self and career pursuits. This is the most challenging part of my life but at the same time the most crucial. I am learning more about myself right now then I have ever done and being on my own is not easy, and lonely at times. However, I remind myself that I have worked hard my whole life, and if I continue to work hard, I can create a life that gives me meaning and helps me benefit the well – being of others. 

Being in a new place has allowed me to establish my true identity and evaluate what makes me happy and when I sat back and reflected I thought of this blog. Blogging made me happy and gave me meaning when I was actively doing so, therefor this beginnings the new chapter of my life where I will spread my words of inspiration, recipes of full body wellness and motivation to others.

Living and Learning: Balance

Wow… It’s been a very long pause in my postings. I can’t blame it on anything else but myself. This summer I found new passions that livened my soul. School started and set my lifestyle I created off balance. I have learned through this pause in my posting how important is it to have a balance in life. Every living thing needs balance, otherwise we are left with chaos and distress. We thrive best when aspects of our lives have a flow. Through this pause I have had to change, rebalance, and establish a new flow. My goal is to post more… So get ready for those recipes and healthy clean eating tips and ideas! New things are coming 😊

Clean Eating: Watermelon, Olives, Mint Salad

Refreshing and super healthy salad idea!
1 whole watermelon
1 cup of mint leafs
Olives
Lime juice

That’s all! I love this on hot days, the combination of the watermelon with olives is delicious. You get healthy fats from the olives as well as the anti-inflammatory and antioxidant benefits from the watermelon. I put fresh mint leafs from my garden. I added a little lime juice for some tangy flavor.

Try this and enjoy, makes enough to please a crowd or leftovers are great on a bed of arugula with tomatoes and if you eat dairy feta is amazing with this salad.

Clean Cooking: Zucchini Crust Pizzas

I was craving pizza and we had a ton of zucchini so of course I created up this delicious and easy dinner!

Crust:
1 zucchini
1 egg
2-3 tablespoons of nutritional yeast
Basil

First, I processed a whole green zucchini and then added in the basil. I mixed in the egg and nutritional yeast. I then created 4 patties on a pizza cooking sheet, make sure to spray the sheet. I used some olive oil on the sheet. Place in the oven at 375 for about 10-15 mins until a little golden.

Toppings:
Baby mushrooms
1 Banana pepper
1 Shallot
Garlic

I sautéed this all in a pan while the crust was baking. When the crust was done I added cut up tomatoes and the toppings onto the crusts. I baked these for an additional 15 minutes.

Easy and delicious! Get creative with the toppings!

Clean Eating: Red Cabbage, Carrot, and Brussel Sprout Salad

Here is a salad that was inspired by a few Pinterest recipes I saw.
1 small red cabbage head
4-5 rainbow carrots (I use the rainbow carrots from Trader Joe’s)
2 cups of cooked brussel sprouts
Chopped parsley
Chopped chives
Lemon juice
Lime juice
Virgin balsamic

I quartered the red cabbage and cut out the core. Instead of using the food processor I just chopped it finely. The food processor can be used and you could add all the ingredients into it. I then used a vegetable peeler and peeled the rainbow carrots. I love rainbow carrots! They add color to any salad, they are great to ribbon and add into bean salads or add color to sautéed veggies! I used Trader Joe’s frozen brussel sprouts, I microwaved them for 5 minutes then let them cool before adding them in with the red cabbage and carrots. The herbs were all from my garden!
Before seasoning I drained out any excess liquid from the veggies. I added pepper, some lemon and lime juice as well as a little bit of virgin balsamic vinaigrette.

I made this salad for a night we had friends over for dinner… And it was a hit! It’s refreshing and light. I have wanted to find a way to enjoy eating raw red cabbage since it has loaded with antioxidants and this salad is defiantly a way to do so!

Fitness: Today’s Metabolism Boosting Workout

Today’s workout was a butt kicker! This metabolism boosting workout kept my heart rate up the whole time with a combination of cardio and strength.
If you want to see results in weight loss or full body fat reduction this type of workout is great to do twice to three times a week.

Metabolism is the way our bodies burn energy, which is measured in calories. Adding a combination of strength moves to a high intensity cardio routine boosts your metabolism.. In other words it’s helps your body burn energy more efficiently. Along with a clean diet or fruits, veggies, clean proteins will help your body be a mean lean fat burning machine!
When you increase your muscle, you boost your resting metabolic rate. So you end up burning more calories, doing everyday activities and while your body is at rest, then the person who doesn’t do any strength training.
